Rooted in a rich history that traces back to the heart of London’s iconic Lombard Street, Hispania began in 2013 inspired to create an unparalleled experience of Spanish gastronomy and culture. Led by award-winning chef Marcos Morán, a fifth-generation chef and executive chef of Casa Gerardo, Hispania showcases his expertise. Morán holds a Michelin Star, three Repsol Soles, and has been named “chef de l’avenir” by the International Gastronomy Academy.
In 2016, Hispania expanded to Brussels’ Grand Sablon Square, becoming a beacon of Spanish cuisine in Belgium and Benelux. Gran Meliá Nha Trang, a luxurious seafront resort on Vietnam’s central coast, is elevating its culinary offerings with the introduction of Javier Gonzalez Salido as the new Chef de Cuisine at Hispania Nha Trang, its signature Spanish dining destination. Since launching last year, the resort has been celebrated for its refined gastronomy.
Chef Javier, who began his career at the Michelin-rated Ibérica by Nacho Manzano in the UK and honed his skills at prestigious European kitchens, including the three-Michelin-starred StreetXO in London, will now lead the culinary team at Hispania Nha Trang. His focus will be on crafting world-class Spanish cuisine using the freshest Vietnamese ingredients, including local seafood from Nha Trang Bay.

FOC Restaurant at HongKong Street brought Barcelona spirit to Singapore back in September 2014. It all started o as a collaboration between Michelin Star Chef Nandu Jubany and a group of local Spain-acionados, who wanted to recreate ne and authentic Barcelona avours in Singapore… What does FOC mean? No, it’s not ‘free of charge’…Believe it or not, the word ‘FOC’ /fok/ means ‘FIRE’ in Catalan, the language spoken in Barcelona’s region, North East of Spain.
Chef Juanjo joined FOC Group in 2019, bringing over 25 years of experience from Spain, London, Hong Kong, and Malaysia. His expertise in European and Asian cuisine, along with advanced pastry skills, enhances FOC’s FINE FUN FOOD culture with his leadership and refined culinary techniques.
